This is not an official Callisto release, it's just something I threw together as an example. With more planning of the shot (lighting and camera angle etc.) you can come up with much better results.

I was impressed to see this test sequence.
Although I still feel a cockpit mock-up will provide a more realistic sequence, and help the actors to get into it more...

With that, it'd be pretty darn hard to do, given I wouldn't want to only do straight on shots

This technique is not limited to static frontal shots. As I said in a previous post, with planning you can achieve much better results. You can definitely have a wide range of camera motion.
Remember that the sequence was only a rough example, the original footage was never shot with the intention of compositing and the render of the viper was very basic.
Don't think I am trying to put you off creating full sized props, I prefer real props and sets to CG. If you'd rather go that way I (along with many others) would be very pleased.
