Kitchen Chackatorre
Hi all!
Ah yes, recipe ideas time! Last night I made a variation on chicken cacciatorre which I thought I would share, in case you wanted to try it. And it uses a slow cooker which makes it so easy.
For 4 people, you will need:
- 4 large chicken breasts (cut in half and remove bras)
- 2 cups water
- 2 8 oz cans tomato sauce
- 2 tablespoons flour
- garlic seasoning (about 1 1/2 tblsns)
- onion powder (about 1 tblspn)
- lots of basil (about 4 tblspns)
- 1 tspn dry mustard
- 1 tspn lemon pepper
- salt to taste
- cayenne pepper
- crushed red pepper
- cooking oil
Spice chicken breasts with all spices except crushed red pepper and let marinate for 1-2 hours. Then saute for 15-20 minutes on low heat in a large covered pot with 2 tblspns cooking oil and 1/2 cup water. Inside of chicken will still be raw. Put 2 tblspns cooking oil in bottom of large slow crock pot, then add water, flour and tomato sauce. Add all spices listed above, adjusting amounts to your taste. Simmer for about 15 minutes and sample often to ensure you are happy with the flavor. Add chicken and simmer on high for 2 hours. I usually add some more crushed red pepper after about 1 hour. You may optionally add spaghetti noodles to make it go farther. It's also very good simmered with 1/3 to 1/2 cup white wine if you like that.
Servers 4! Hot and spicy!
